
Prosciutto Bruschetta with Ricotta Cheese

- 16 slices Carando® Prosciutto
- ½ cup tomatoes, seeded and diced
- ¼ cup basil
- 2 tsp. balsamic vinegar
- ½ tbsp. minced garlic
- 2 ½ tbsp. extra virgin olive oil
- 4 tbsp. fresh ricotta cheese
- 1 Italian baguette, cut in half crosswise then lengthwise
Directions
1. In a bowl, toss together the tomatoes, basil and garlic. Mix in the balsamic vinegar, olive oil, kosher salt, and pepper.
2. Toast baguette slices under a broiler.
3. Layer toasted bread slices with tomato mixture, ricotta and prosciutto.
