Ingredients
- 1 medium onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 tablespoons extra virgin olive oil
- 1/2 lb. Carando® Sliced Pepperoni
- 4 (11-oz.) cans whole kernel yellow corn, drained
- 1/4 cup butter
Preparation
- Sauté onion and peppers in olive oil over medium-high heat until softened (about 4-6 minutes).
- Lower heat to medium; add pepperoni and drained corn. Continue to sauté for another 2-3 minutes. Add butter, mix together and serve.
