Southwestern Ham Salad
Ingredients
- 4 slices Carando® Spiral Sliced Ham - Bone-In - Hickory Smoked
- 1/2 cup lime juice
- 1 tablespoon sugar
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 (4-oz.) can chopped green chiles
- 1 (15-oz.) can red kidney beans, rinsed and drained
- 1 small red onion, thinly sliced
- 4 cups torn lettuce
- 1 medium tomato, sliced into wedges
- 1 ripe avocado, peeled and sliced into wedges
- salsa, if desired
Preparation
- Cut ham slices into strips; set aside. Combine lime juice, sugar, chili powder and cumin in medium bowl. Add green chiles, beans and half the red onion slices; stir to coat vegetables.
- Place 1 cup lettuce on each serving plate. Divide vegetables and dressing on the lettuce. Arrange tomato, avocado, ham and remaining onion slices on salads. Serve with salsa if desired.
