Southwestern Ham Salad

Ingredients

  • 4 slices Carando® Spiral Sliced Ham - Bone-In - Hickory Smoked
  • 1/2 cup lime juice
  • 1 tablespoon sugar
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 (4-oz.) can chopped green chiles
  • 1 (15-oz.) can red kidney beans, rinsed and drained
  • 1 small red onion, thinly sliced
  • 4 cups torn lettuce
  • 1 medium tomato, sliced into wedges
  • 1 ripe avocado, peeled and sliced into wedges
  • salsa, if desired

Preparation

  1. Cut ham slices into strips; set aside. Combine lime juice, sugar, chili powder and cumin in medium bowl. Add green chiles, beans and half the red onion slices; stir to coat vegetables.
  2. Place 1 cup lettuce on each serving plate. Divide vegetables and dressing on the lettuce. Arrange tomato, avocado, ham and remaining onion slices on salads. Serve with salsa if desired.
