Salami Quesadillas

Ingredients

  • 1 1/2 (8-oz.) pkgs. Carando® Deli Quick Sliced Genoa Salami
  • 8 (9-inch) flour tortillas
  • 1 cup salsa
  • 1/4 cup chopped onion, optional
  • 1/4 cup chopped green chiles, optional
  • 1/4 cup chopped fresh cilantro, optional
  • 1 cup (4 oz.) shredded Monterey Jack cheese

Preparation

  1. Coarsely chop salami; set aside. Lightly coat one side of one tortilla with water. Place tortilla, moistened side down, on heated griddle.
  2. Spread 1/4 cup salsa on tortilla; sprinkle with 1 tablespoon of each of the optional ingredients as desired. Sprinkle 1/4 cup salami and 1/4 cup cheese on top. Cover with a second tortilla. Brush top of tortilla lightly with water; press tortilla to seal.
  3. Cook on griddle until bottom is slightly browned. Turn quesadilla and brown second side. Remove from griddle; cut into 8 wedges for serving. Repeat with remaining ingredients.
