Puffy Ham and Egg Casserole
Ingredients
- 12 egg(s), beaten
- 1/2 cup flour
- 1/4 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups Carando® Spiral Sliced Ham - Bone-In - Hickory Smoked, chopped
- 2 cups (8 oz.) shredded Monterey Jack cheese
- 2 cups (8 oz.) shredded Cheddar cheese
- 1 cup small curd lowfat cottage cheese
- 2 (4-oz.) cans chopped green chiles
- 1/3 cup chopped red bell pepper
Preparation
- Heat oven to 350°F. Combine eggs, flour, milk, baking powder and salt in large bowl. Add ham, Monterey Jack and Cheddar cheeses. Stir in cottage cheese, green chiles and red bell pepper.
- Pour egg mixture into 13x9x2-inch baking dish coated with nonstick cooking spray. Bake, uncovered, at 350°F. for 40 to 45 minutes until puffy in center and lightly browned, or knife inserted near the center comes out clean. Let stand 5 minutes before serving.
