Puffy Ham and Egg Casserole

Ingredients

  • 12 egg(s), beaten
  • 1/2 cup flour
  • 1/4 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups Carando® Spiral Sliced Ham - Bone-In - Hickory Smoked, chopped
  • 2 cups (8 oz.) shredded Monterey Jack cheese
  • 2 cups (8 oz.) shredded Cheddar cheese
  • 1 cup small curd lowfat cottage cheese
  • 2 (4-oz.) cans chopped green chiles
  • 1/3 cup chopped red bell pepper

Preparation

  1. Heat oven to 350°F. Combine eggs, flour, milk, baking powder and salt in large bowl. Add ham, Monterey Jack and Cheddar cheeses. Stir in cottage cheese, green chiles and red bell pepper.
  2. Pour egg mixture into 13x9x2-inch baking dish coated with nonstick cooking spray. Bake, uncovered, at 350°F. for 40 to 45 minutes until puffy in center and lightly browned, or knife inserted near the center comes out clean. Let stand 5 minutes before serving.
