Prosciutto Gorgonzola Bruschetta

Ingredients
- 2 cups diced fresh cantaloupe or mango
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon chopped parsley
salt and pepper to taste - 1 loaf Italian bread
- 4 oz. Gorgonzola cheese, crumbled
- 4 oz. spreadable goat's milk cheese (chavrie)
- 2 tablespoons butter, soften
- 2 4 oz. pkg. Carando® Riserva Speciale Prosciutto
Preparation
- Combine fruit, olive oil, lemon juice and parsley
Stir in salt and pepper to taste; set aside.
Slice bread on diagonal (bias) into 16 slices; toast. - Using a fork, mash together Gorgonzola, chavrie
and butter until blended. - Spread 1 tablespoon cheese onto toast.
Top with 1 tablespoon fruit and 1 to 2 slices prosciutto.
