  1. Cook tortellini according to package directions; drain.
  2. Combine diced pancetta, butter and olive oil in medium saucepan over medium heat. Cook until pancetta begins to render (about 2-3 minutes). Add sage; cook until butter starts to brown in spots and pancetta-sage mixture crisps (about 6 minutes).
  3. Add salt & pepper to taste. Toss sauce with tortellini. Serve immediately topped with grated cheese.
